Coconut and lime muffins

INGREDIENTS

  • 250 g all-purpose flour
  • 200 g sugar
  • 9 g baking powder
  • 3 g salt
  • 2 tablespoon grated coconut
  • 1 egg
  • 60 ml milk
  • 60 ml vegetable oil
  • 45 ml lime juice
  • 3 g grated lime peel

DIRECTIONS

  1. In a bowl, combine the first four ingredients. In another bowl, beat the egg, milk, oil, lime juice and peel. Stir into dry ingredients just until moistened. Fill paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
  2. To glaze them just mix icing sugar with milk. Pour the icing over the muffins and sprinkle with coconut flakes and green sugar.
